I needed a simpler baked beans recipe. The first recipe I read sounded amazing but I didn’t have enough time wait. I was in a rush. For the second recipe it was too many steps…I needed to combine things to make it more efficient. Let’s see how things go…..
First attempt (let’s hope it tastes ok). I made salt pork. I turned on my instant pot to Saute and then cooked the pork/bacon. Then I threw in the onions after the pork was browned. I put in some salt/pepper/ketchup/maple syrup and the “canned white kidney beans” (was all that I found at the grocery store). Then I poured just enough water to cover the beans and then closed the lid and set it on manual for 30 minutes. Let’s hope it tastes ok.
Ok, so final result. It was fantastic! So will write it up in a little more detail here:
- 1 chopped medium onion
- 1/2 lb salt pork
- 1/2 cup ketchup
- 1/2 cup maple syrup
- 4 cans of 15 oz white kidney beans
- 2 tsp ground mustard
- 1 tsp black pepper
- 1/2 tsp salt
- Turn IP on saute
- Throw in pork, cook until brown. Now throw in onions, ground mustard, black pepper, drained/rinsed beans, salt, ketchup, and maple syrup. Add in just enough water to barely cover the beans. Stir.
- Turn IP onto manual for 25 minutes, then do a quick release. Dump everything into a bake safe container. I used a dutch oven. Turned on the oven to 375 for 60 minutes for a nice crusty top layer.
It was fantastic. Will definitely be making this recipe again. The black crusty part was my favorite! HAHAHA
